Busan Fireworks Festival takes place every autumn along Gwangalli Beach. The festival’s diverse programs of cultural events, high-tech laser light shows, and myriad of unique and colorful fireworks make this one of the area’s most popular festivals, drawing crowds of over 1 million visitors each year. Haeundae Gaya Milmyeon, founded in May 1998, is a famous milmyeon (wheat noodles) restaurant, a local Busan dish that has been loved for a long time. Milmyeon was created during the Korean War. Refugees who missed the taste of Hamheung-style naengmyeon (cold buckwheat noodles) made noodles using wheat flour instead of buckwheat, which was difficult to find in Busan at the time, and milmyeon became a local food in Busan. Haeundae Gaya Milmyeon boils brisket, shank, native chicken feet, ginger, onion, garlic, and various herbal medicines for 48 hours to create their broth. Then, the broth is aged for more than a year. A bowl of chewy milymeon noodles is served in a refreshing, icy broth topped with pickled radish, cucumber, boiled egg, and meat garnish. In addition to milmyeon, the restaurant also sells bibimmyeon (spicy noodles) and mandu (dumplings) with impressive chewy mandu skin.
